If you're struggling to get some nutrients in yours or your kids diet, this is a great way to sneak in all the goodness through our high quality, nutrient-dense microgreens as well as some healthy fats.
Mix through fresh pasta and add some fresh tomatoes, or grilled vegetables, or simply spread on toast with a poached egg. Pesto is very versatile, and can be very good for you too! You can also sub in spinach or rocket instead of microgreens for a different flavour!
1 cup Farmer Jon's basil
1 cup Farmer Jon's microgreens
1/2 cup walnuts
1/2 cup pumpkin seeds
1/2 cup extra virgin olive oil (Add more if pesto is too thick until it reaches desired consistency)
1 Farmer Jon's garlic clove (you can roast this beforehand if you prefer a less intense garlic flavour)
Juice and zest of 1/2 a lemon
1 cup good quality parmesan cheese (You can use 2 tbsp nutritional yeast flakes to make it dairy free/vegan)
Sprinkle chilli flakes (optional)
Salt and pepper to taste
Put all of the ingredients into a high powered blender or food processor, and pulse until reaches desired consistency.
